Fox nuts are infinitely better cooked in soup. Takes out the dirt/bitter and they puff up not entirely unlike barley or bulgur or rice or whatever. Recipe follows.

|
~1/3 cup fox nuts,
|
||
|
~5 cups water,
|
||
|
one skinless chicken breast snipped up with kitchen scissors,
|
||
|
powdered ginger,
|
||
|
two astragalus shaved-twig things,
|
||
|
green onion/scallion,
|
||
|
two pods cardamom,
|
||
|
"dried black fungus" (shredded),
|
||
|
1 cup orange juice,
|
||
|
|
||
|
alternatingly boil and simmer all that crap together for a few hours until the chicken falls apart like in Campbell's soup. == Yum. Makes like 2-4 servings after the broth's boiled down.
