From Joy of Cooking '75, modified slightly
Quick (Cocoa) Banana Bread
Two 8.5"x4.5" loaves
Preheat oven to 350° F.
Sift together:
3½ cups all purpose flour
4 teaspoons double-acting baking powder
1 teaspoon salt
2 tablespoons unsweetened powdered cocoa
Blend until creamy:
2/3 cup shortening
1 1/3 cups sugar
Beat in:
4 beaten eggs
2 cups ripe banana pulp (about one bunch of 5 or 6 bananas)
Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
Fold in (optional):
(½ cup broken nutmeats)
(¼ cup chopped dried apricots)
Place the batter in greased bread pans. Bake the bread about 1 hour or until done. Cool before slicing.
