<p><big>Quick (Cocoa) Banana Bread</big>

<strong>Two 8.5&rdquo;x4.5&rdquo; loaves</strong>

Preheat oven to 350° F.
Sift together:
<strong>3½ cups all purpose flour</strong>
<strong>4 teaspoons double-acting baking powder</strong>
<strong>1 teaspoon salt</strong>
<strong>2 tablespoons unsweetened powdered cocoa</strong>
Blend until creamy:
<strong>2/3 cup shortening</strong>
<strong>1 1/3 cups sugar</strong>
Beat in:
<strong>4 beaten eggs</strong>
<strong>2 cups ripe banana pulp (about one bunch of 5 or 6 bananas)</strong>
Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
Fold in (optional):
<strong>(½ cup broken nutmeats)</strong>
<strong>(¼ cup chopped dried apricots)</strong>
Place the batter in greased bread pans. Bake the bread about 1 hour or until done. Cool before slicing</p>
