Fox nuts are infinitely better cooked in soup. Takes out the dirt/bitter and they puff up not entirely unlike barley or bulgur or rice or whatever. Recipe follows.

~1/3 cup fox nuts, ~5 cups water, one skinless chicken breast snipped up with kitchen scissors, powdered ginger, two astragalus shaved-twig things, green onion/scallion, two pods cardamom, “dried black fungus” (shredded), 1 cup orange juice,

alternatingly boil and simmer all that crap together for a few hours until the chicken falls apart like in Campbell’s soup. == Yum. Makes like 2-4 servings after the broth’s boiled down
