<p>Fox nuts are infinitely better cooked in soup. Takes out the dirt/bitter and they puff up not entirely unlike barley or bulgur or rice or whatever. Recipe follows.</p>
<p>~1/3 cup fox nuts,
~5 cups water,
one skinless chicken breast snipped up with kitchen scissors,
powdered ginger,
two astragalus shaved-twig things,
green onion/scallion,
two pods cardamom,
&ldquo;dried black fungus&rdquo; (shredded),
1 cup orange juice, </p>
<p>alternatingly boil and simmer all that crap together for a few hours until the chicken falls apart like in Campbell&rsquo;s soup. == Yum. Makes like 2-4 servings after the broth&rsquo;s boiled down</p>
